For 4 people

  • 3 kiwis
  • 60 g of flour
  • 40 g cornflour
  • 60 g caster sugar
  • 2 eggs
  • 50 g butter + 10 g for the mussels
  • 4 tbsp cream
  • 1 lemon
  • ½beast of baking powder
  • 1 pinch of salt


Preheat the oven to 180 ° C. In a saucepan, melt the butter over low heat.

Peel the kiwis. Cut a dozen slices of kiwi and the rest of the fruit into small cubes.

Butter the silicone muffin cups with the 10 g of butter provided for this purpose and place a slice of kiwi in each cell.

Separate the whites from the egg yolks in 2 separate salad bowls. Beat the egg whites firmly on the electric mixer.

Beat the yolks with the sugar until the mixture turns white. Add 50 g melted butter, kiwi cubes, crème fraîche, juice and lemon zest. Then add the flour, cornflour and yeast. Mix well (if necessary with a whisk) to obtain a smooth mixture.

Then gently fold the egg whites into the snow. Pour the dough into the muffin cups and bake for about 30 minutes.

To give an exotic note to this dessert, it can be served with a fruit coulis: cut diced mango or pineapple and then mix them finely to make an express coulis.
